IKOYI

One of the World’s 50 Best Restaurants and with 2 Michelin Stars, we work closely with Chef Jeremy Chan to devise a menu that works alongside a tasting menu full of Heat, Spice and Flavour. The menu takes inspiration from the ingredients the restaurant uses, including Timur Pepper, Plantain and Baobab. With drinks designed to be served in a restaurant with no bar, and integrated into seamless service.

In 2023 we opened 3 concepts over 2 hotels in Calla Longa, Ibiza. Our first Hotel opening as partners came with multiple challenges. In the lead up we had to design a menu based around the limited products available on the island, as well as factor in intermittent availability of products. For the opening, we were on site for the final build phase, soft launch and opening. We delivered 3 separate concepts; a Lobby bar, SUN & MOON, an all day Mexican restaurant, CUYO, and a fine dining Japanese venue, Neko.

The Tamil PRince

The Tamil Prince is one of London’s most celebrated openings of the last few years. In keeping with the Three Sheets ethos, we worked closely with the chefs to create a drinks list that is playful, clean and simple to construct behind the bar for a rapidly growing group.

Coca Cola

Max was integral into the launch of Coca Cola’s Signature mixers range. He worked closely with the Coca-Cola development team to select the candidates who would go on to develop the four flavours, as well as creating the Smoky batch himself. Helping to define the drinks strategy and launch the product in over 14 markets.

PoolHouse

Poolhouse, opening February 2026, is a 1000-capacity social gaming concept from the team behind Puttshack and Topgolf. We have worked with the team on bar design, menu conception, back-of-house systems, prep and speed of service. Creating a system where we can serve world class drinks on scale, with over 5000 customers a day predicted.
